Serves 2
2 (1½-inch-thick) New York strip steaks, brought to a cool room temperature (about 30 to 60 minutes)
4 tablespoons Le Courage spice blend
Kosher salt and fresh-cracked black pepper
1 ½ tablespoons good olive oil
Directions
Preheat the oven to 500 degrees.
Pat the steaks dry with a paper towel and place them in a baking dish. Pat them dry again.
Liberally rub the steaks with Le Courage spice blend and black pepper and allow steaks to sit for 10 minutes.
Place olive oil in a cast-iron skillet on the stove and evenly sprinkle the kosher salt on the surface of the skillet (about ½ to ¾ teaspoon). Turn heat to high.
Once the skillet is smoking hot, cook steaks for 30 seconds on one side and flip. Cook the other side for 30 seconds. Immediately transfer the skillet to the oven and cook steaks for two minutes. Using tongs, flip the steaks and cook for another two minutes (four minutes total in the oven) to achieve medium-rare steaks.
Immediately remove the steaks from the skillet, tent with foil and allow to rest for two minutes.
Cooking Tips
If you prefer your steaks medium, add another minute of oven-cooking time per side.
