Diaspora of Influence: Cuba
Vegetables, soups, stews and salad dressings get a vigorous boost from our Cuban-and-Algerian-influenced Resilient blend, a remarkably piquant seasoning punctuated with cumin, mustard seeds, ginger and seriously spicy (and fruity) scotch bonnet peppers. The gloriously pungent notes of ginger and chilies marry beautifully with the pininess of cumin, while the mustard seeds add an intensity of flavor that’s so good, you won’t need to reach for the salt. This blend holds up extremely well against high heat, especially since cumin is so responsive to toasting. Keep a jar on the table to sprinkle over anything and everything.
Add your choice of oil to my Resilient spice blend to use on grilled or roasted vegetables, or make my personal favorite salad dressing:
- Juice of four limes
- Lime zest
- 1 cup extra virgin olive oil
- ½ cup distilled white vinegar
- 1tablespoon fresh turmeric (or ½ teaspoon powder)
- 1 tablespoon fresh ginger
- 1tablespoon Resilient spice blend
- Add all ingredients to a mixing bowl and whisk until emulsified
