Viagem: Coconut Shrimp Curry

Serves 4


¼ cup dendê oil, or red palm oil 4 medium shallots, peeled and chopped

6 large garlic cloves, peeled and chopped

2 tablespoons fresh ginger, peeled and chopped

1 Serrano chili, seeds and veins removed and chopped

1 yellow bell pepper, cored, seeded and sliced

¾ teaspoon Viagem spice blend

½ teaspoon cayenne pepper

1 ½ teaspoons sea salt

I can full-fat unsweetened coconut milk

½ cup crushed tomatoes

Juice of ¼ lime

1 ½ pounds wild shrimp, rinsed and peeled

¼ cup packed cilantro leaves, roughly chopped, plus more for serving

½ cup crushed cashews

Fresh lime slices

Cooked white rice


Directions

  1. Heat the oil in a large Dutch oven over medium heat. Add shallots, garlic cloves and ginger and cook, stirring occasionally, until shallots are soft. Add Serrano chili, bell pepper, Viagem spice blend, cayenne pepper and sea salt.

  2. Stir in coconut milk, crushed tomatoes and lime juice.

  3. Bring heat to high and add shrimp. Cook just until the shrimp turn pink.

  4. Toss in cilantro.

  5. Divide cooked rice equally among four bowls, top with curry and sprinkle each portion with a handful of crushed cashews and cilantro leaves. Serve lime slices on the side.


Cooking Tips

Dendê oil (or red palm oil) is pressed from the fruit of oil palm trees — grown in Brazil and Africa — and boasts a beautiful desert-red color. Thicker and more flavorful than other oils, you can find dendê oil at most international markets, online and at some well-stocked grocery stores.


If you’ve counting carbs, you can easily substitute cooked cauliflower rice for white rice.


The curry can be stored in an airtight container in the refrigerator for up to three days.
